Our Story
Mustang Bistro started with a question that kept coming back: why does good bread feel like a luxury instead of a Tuesday? We opened our doors on MO-59 because Anderson deserved a kitchen that treats ingredients with respect — flour that's milled fresh, butter that actually tastes like butter, and the patience to let dough rise the way it wants to.
We're not trying to be everything to everyone. We make fewer things, but we make them well. If it leaves our counter, it's because we'd be proud to put it on our own table. That's the standard. It's the only standard.
What We Make
48-hour fermented. Crusty outside, cloud-soft inside. Our starter has been feeding the same way since day one.
Croissants, pain au chocolat, almond pains — each one folded by hand, butter-layered, and baked until every flake does its job.
Cinnamon rolls, tarts, cookies, and seasonal specials. Made in small batches so nothing sits around pretending to be fresh.
Locally roasted coffee, espresso drinks, fresh juice, and seasonal specials. Paired with something from the case — that's the routine.
Breakfast spreads, dessert tables, and custom orders for local events, weddings, and gatherings around the Ozarks.
Things that only show up when they should. Pumpkin bread in October. Peppermint buns in December. You'll know them when you taste them.
Our Process
Most of what makes our bread good happens before you walk in. Long ferments develop flavor no shortcut can replicate. Hand-shaping each loaf honors the baker's instinct — the feel of the dough, the humidity in the room, the temperature of the day. We don't automate what we can attend to.
And when it comes out of the oven, we'd rather sell out at 2 p.m. than reheat yesterday's batch. That's not a marketing line — that's just how we run things.
